FibRefine P90 Soluble Tapioca Fiber is a powdered prebiotic fiber—a mixture of oligo- and polysaccharides composed of fructose moieties joined by beta (2-->1) linkages in linear chains. It is derived from a resistant dextrin strain that comes from cassava root—a plant traditionally grown in tropical regions. A simple enzymatic step breaks down the tapioca starch to the prebiotic fiber that is conducive to the keto diet. When it comes to prebiotics, chain length and the degree of polymerization are the differentiators of terminology—with inulin having a slightly higher DP. Inulin is referred to as fructooligosaccharide or oligofructose when the average chain length is between 3 and 5.
