SteviaSweet RM95 is stevia extract powder with a minimum of 95% concentration of rebaudioside M—one of many steviol glycosides found in the Stevia rebaudiana plant. Steviol glycosides are the group of sweet constituents which reside in the stevia rebaudiana leaf, giving it its telltale sweet flavor. SteviaSweet RM95 is quite sweet; approximately 100 times sweeter than sugar. Where SteviaSweet RM95 really shines is as a sweetness or flavor modulator. SteviaSweet RM95 can enhance the normal sucrose sensory response through the action of a sweetener receptor positive allosteric modulator (PAM). When you stack Reb M with other glycosides you can achieve positive allosteric modulation, thus extending the perception of sweetness through the entire flavor experience. SteviaSweet RM95 can be used as a standalone sweetener, or in conjunction with low intensity sweeteners and fibers. When combined with low intensity sweeteners like erythritol or allulose, the sweetening blend provides a neutral flavor profile that can be used as a plug-and-play replacement for sugar.
