Fructevia is a powdered blend of crystalline fructose, FOS [fructooligosaccharides], and steviol glycosides. Fructose is a natural fruit sugar found in many plants. Icon Foods uses a stringent process—the same manufacturing practice that is used for sugar cane and sugar beets—to produce crystalized fructose. This process involves purification, filtration, and crystallization. Not to be confused with high fructose corn syrup—which can be created by further refining fructose to yield a solution containing less than 10% natural fructose—crystalline fructose has a low glycemic index. This system ranks food ingredients on a scale from 1 to 100, with the smaller numbers having little effect on blood sugar levels and the larger numbers having a higher effect on blood sugar levels. For example, Icon Foods’ crystalline fructose has a glycemic index rating of 20, whereas skim milk has a rating of 31 and sucrose has a rating of 59. This means that 1 ounce of crystalline fructose will only raise blood sugar levels ≈ ⅓ as much as the equivalent amount of sucrose—it also releases ≈ ⅓ as much insulin.

FOS is a type of prebiotic fiber—a mixture of oligo- and polysaccharides composed of fructose moieties joined by beta (2-->1) linkages in linear chains. It can act as a sweetness modulator when used in conjunction with high intensity sweeteners like stevia—steviol glycosides are the group of sweet constituents which reside in the stevia rebaudiana leaf, giving it its telltale sweet flavor. Fructevia combines these three elements, creating a blend that is 3x as sweet as sugar. As one of our most delectable blends, Fructevia provides a taste and texture comparable to sugar and is capable of browning, melting, and caramelizing. Fructevia can be used as a standalone sweetener—the sweetening blend provides a neutral flavor profile that can be used as a plug-and-play replacement for sugar. Fructevia is non-GMO and kosher.
