LoSweet is a natural sweetening solution that brings together optimal levels of mogroside V—the sweet constituent found in monk fruit extract—and erythritol, a sugar alcohol derived by microbial fermentation. This combination offers multiple advantages. Monk fruit is high intensity sweetener—approximately 250 times the sweetness of sucrose. Extremely low percentages of high intensity sweeteners are required when formulating, and because of their intense sweetening power, their use must be carefully controlled. Since such small amounts are used to deliver the same sweetness as sucrose, the resulting formula lacks solids—these must be built back to achieve a comparable mouthfeel. Where LoSweet really shines is in its ability to mask off notes. When combined, these sweetening compounds provide a neutral flavor profile that can be used as a plug-and-play replacement for sugar. On its own, monk fruit can have off-notes reminiscent of melon rind. Erythritol is used as a bulking sweetener and natural flavor enhancer that helps mask the off that can be expressed by monk fruit on its own. Similarly, erythritol can contribute a mild cooling effect which is masked by mogroside V in monk fruit. Overall, the sweetness delivery is clean and neutral. This optimized low-calorie, sweetening solution allows formulators to remove or reduce added sugar in a variety of foods including beverages, sauces, dairy products, confections, and baked goods—with just 0.2 calories per gram. Exceptionally pH stable, LoSweet works well in jams, jellies, and fillings. At finer mesh sizes, it can also be used to formulate smooth, nongranular, reduced-calorie icings, fondants, cream fillings, meal replacement bars, drink mixes, sauces, and dressings. LoSweet is non-GMO, kosher, and is available in both conventional and organic certified versions. Because our LoSweet is derived without the use of chemicals, it can be used to support a clean label claim.
